For an authentic Kerala-style fish curry:
Preparation: Heat coconut oil in a clay pot (Manchatti) and sauté mustard seeds, fenugreek seeds, curry leaves, ginger, garlic, and shallots.
Spice Base: Add chopped tomatoes and cook until mushy. Lower the heat and add 2 tablespoons of Double Horse Fish Masala along with turmeric and salt.
Simmer: Add water and a piece of soaked Malabar Tamarind (Kudampuli) for tanginess. Bring the gravy to a boil.
Cook Fish: Gently add 500g of fresh fish pieces. Cover and cook on medium heat for 10–12 minutes until the fish is tender and the gravy thickens.
Finish: Drizzle a teaspoon of fresh coconut oil over the top and serve hot.
Serving Suggestion: Best enjoyed with Rice or soft, fresh appams
